มาเมืองตรังนั่งร้านติ่มซำ มองหาน้ำจิ้มจิ๊กโฉ่ว หรือซอสเปรี้ยว น้ำจิ้มชูรสที่ใช้กินคู่กับขนมจีบ ติ่มซำไม่เจอ แต่สิ่งที่พบเห็น คือ น้ำจิ้มสีแดงชมพู สร้างความแปลกใจให้กับคนต่างถิ่นไม่น้อย น้ำจิ้มสีแดง ชมพูที่เห็น คือ “น้ำจิ้มค้อมเจือง” น้ำจิ้มที่คนตรังใช้รับประทานคู่กับติ่มซำ มีรสชาติและลักษณะที่มีความ เฉพาะตัวที่พบเจอได้ในจังหวัดตรังเท่านั้น

ค้อมเจือง คือ อะไร
จากการสืบค้นข้อมูลจากหอจดหมายเหตุแห่งชาติเฉลิมพระเกียรติสมเด็จพระนางเจ้าฯ จังหวัดตรัง ในหนังสือสารานุกรมวัฒนธรรมไทย ภาคใต้ เล่ม 3 พ.ศ. 2542 ได้ระบุว่า “ค้อมเจือง” เป็นอาหาร ประเภทน้ำจิ้ม หรือ ซอสชนิดหนึ่ง รู้จักกันมานานในหมู่ชาวตรังที่มีเชื้อสายจีน โดยกล่าวกันว่า ค้อมเจือง เป็นอาหารที่มีมานานพอ ๆ กับหมูย่างซึ่งเป็นอาหารที่ขึ้นของเมืองตรัง คําว่า “ค้อมเจือง” นั้น เป็นชื่อ เรียกตามสําเนียงจีนเชื้อสายกวางตุ้ง แต่เดิมเรียกว่า “หอยชิ้นเจือง” ที่แปลว่า ซอสใหม่ หรือ ซอสสด โดยต่อมาได้เปลี่ยนเป็น “ค้อมเจือง” ซึ่งมีความว่า ซอสทอง จนทำให้หลายคนเข้าใจผิดเรียกว่า “ส้มเจือง” เพราะออกเสียงคล้าย ๆ กัน และอาจเป็นเพราะรสชาติของค้อมเจืองที่มีรสชาติออกเปรี้ยวเล็กน้อยด้วยอีกอย่างหนึ่ง นอกจากนี้ยังมีชื่อเรียกอื่น ๆ อีก เช่น กําเจือง ก่อมเจือง ส่วนประกอบหลักของค้อมเจือง คือ มันเทศ และส่วนผสมอื่น ได้แก่ ถั่วลิสง น้ำส้มสายชู น้ำตาล เกลือ และสีผสมอาหารที่เป็นสีแดง

ลักษณะและวิธีการผลิตค้อมเจือง
ค้อมเจืองเป็นอาหารประเภทน้ำจิ้ม การรับประทานทำได้หลายวิธี โดยอาจนำมาจิ้มได้เลยโดยไม่ต้องปรุงรส หรือหากจะปรุงรสเพิ่มเติมให้เหมาะกับประเภทอาหารก็สามารถทำได้ อาหารที่นิยมนำมาจิ้มค้อมเจือง ส่วนใหญ่จะเป็นผักสดต่าง ๆ เช่น ผักบุ้ง ถั่วงอก โดยเฉพาะแตงกวาหั่นซอยเป็นแว่น ๆ จิ้มกับค้อมเจือง เป็นของกินเล่นในสมัยก่อนของคนตรัง ส่วนอาหารอื่น ๆ ที่จิ้มค้อมเจือง ก็มีหลากหลาย เช่น หมูย่าง เปาะเปี๊ยะ หนมหวัก ขนมปากหม้อ โดยเฉพาะอย่างยิ่งรับประทานเป็นน้ำจิ้มคู่กับติ่มซำ ร้านติ่มซำทุกร้านในเมืองตรังจึงมีขวดน้ำจิ้มค้อมเจืองวางประจำโต๊ะพร้อมถ้วยเล็ก ๆ

ส่วนวิธีการผลิตค้อมเจือง ขั้นตอนแรกใช้มันเทศและถั่วลิสงล้างสะอาดเอาเปลือกออกเรียบร้อย ต้มจนกระทั่งสุกเปื่อยดี พักทิ้งไว้จนเย็นสนิท จากนั้นนำไปโม่จนละเอียด ในสมัยก่อนใช้โม่หินแรงคน ปัจจุบันได้เปลี่ยนเป็นโม่ไฟฟ้า ขั้นตอนต่อมาปรุงรสด้วยน้ำส้มสายชู น้ำตาล เกลือ เติมสีผสมอาหาร เล็กน้อย นำไปต้มจนเดือดอีกครั้ง เคี่ยวต่อด้วยความร้อนปานกลาง พักไว้ให้เย็นสนิท แล้วบรรจุในภาชนะ ที่มีฝาปิดมิดชิด เช่น โอ่ง ไห หรือขวดโหลแก้ว เตรียมนำออกขายได้ ค้อมเจือง เป็นอาหารสดเก็บไว้ได้ไม่ นาน การผลิตและส่งขายจึงไม่กว้างขวาง มีเฉพาะในจังหวัดตรังเท่านั้น
คุณลักษณะที่เหมาะสมของน้ำจิ้มค้อมเจือง คือ มีสีแดงซึ่งเป็นสีเอกลักษณ์ของค้อมเจือง ไม่มี กลิ่นผิดปกติ มีความข้นหนืดเล็กน้อยเพื่อให้จิ้มกับติ่มซำได้ มีรสชาติกลมกล่อม

วิธีการรับประทาน
น้ำจิ้มค้อมเจือง นิยมนำมารับประทานกับหมูย่าง อาหารประเภทติ่มซำที่มีทั้งขนมจีบและขนม อื่น ๆ นอกจากค้อมเจืองทำเป็นน้ำจิ้มแล้ว ค้อมเจืองยังใช้เป็นเครื่องปรุงอาหารประเภทน้ำราดอาหารของชาวตรังอีกหลายชนิด เช่น ขนมปากหม้อ หนมหวัก ผักบุ้งหัวหมู และยังใช้เป็นส่วนผสมในเครื่องปรุง เย็นตาโฟแทนซอสแดงซึ่งใช้กันในที่อื่น ๆ ได้อีกด้วย
